Field Mushrooms and Taleggio Cheese on Bruschetta.
6 even sized field mushrooms
2 knobs butter
1/2 red chilli, finely diced 1 shallot, finely chopped
2 cloves of garlic, crushed
Sprig of thyme
125g/4oz Taleggio cheese (or any good melting cheese)
1 Ciabatta loaf, plain
Salt and pepper
Drizzle of olive oil

- Cut the ciabatta in half – drizzle with olive oil and place on the Denby James Martin Large Platter and toast.
- Melt the butter in a pan – add the shallot, chilli, garlic, thyme and mushrooms. Pan fry on a very high heat until cooked.
Line the mushrooms up on the bread and lay slices of cheese over the top. Melt under a hot grill and serve.
